The photo shows images of a few vegetables. We all have our favourite vegetable Which among them is your favourite and how do you cook it?
Mine insbrinjal. I make a curry with coconut juice after frying the slices of the brinjal. I also cook it adding sweet potato and coconut. I also had plants of brinjal a long time ago and these days I have not been successful.

@allknowing - I never heard the word binjal, they are called aubergines both in France and UK, it's melanzane in Italian.

My favourite vegetable is potato and ladies finger. One of the reasons is that they are found all round the year. I obviously love the seasonal ones also like cabbage brinjal and cauliflower

I eat almost all types of vegetable. These days I'm craving for bitter gourd. We normally just sauté it and coat with beaten eggs. During my last grocery run, I bought bags of spinach, pak choy, wansoy, and celery.

Good you reminded me about bitter gourd. I too like it. We slice it remove the pith marinate in salt squeeze out and cook it in masala and plenty of jaggery and temper it with mustard andgarlic. We add a touch of tamarind water too.

@allknowing Usually I bake them with other veggies (sweet and hot peppers and onions). It is easy and can be served hot or cold. I also make them often fried (breaded). I used to make moussaka but it is difficult. It is a dish for several people. And, last but not least, I make a sort of pickled eggplants. As you see, I love eggplants.
