A new addition to my baking skills

Vince cooks almost all our meals but I have a few things that I make/bake. A couple of weeks ago, I remembered that I used to make a loaf cake that my father liked. You soak bran flakes/cereal in milk and add sultanas and some sugar. I also add cut-up dried apricots and with the last one I made I also added dried cranberries. I’ll probably add it to my repertoire as everyone so far has really enjoyed it. I even remembered to take a photo of the last one I made. I slice it then butter the slices.

Dried apricots are really expensive so I thought having half and half cranberries and apricots would reduce the price a bit. It's still really delicious.

It looks delicious. I have a cherry-pecan loaf that I get asked to make during this time of the year. It is delicious and super easy to make, the only downfall is that the glazed cherries have doubled in price in the past few years. I would attempt to make a Christmas (fruit) cake, but the cost of the various dried fruits and nuts would be far too high for an 'experiment' attempt. And then there would be the brandy......another expense that I do not feel justified.

I wanted to use less apricots as they are so expensive so I replaced some with cranberries. I need to work out if it's actually cheaper or not.

@allknowing There are other loaf recipes I think. They are just cooked in a loaf tin mostly as opposed to a regular cake tin.

There are no raisins as such, just sultanas, cranberries and apricots but I appreciate you might still not like it. Edit: I think maybe cranberries are raisin-like. Is that so? They call them 'craisins' on the packet.

Adding cranberries is a great idea. I use dried cranberries instead of raisins in my quick bread loaves cause the tartness adds a bit of spark to the general sweetness.

That looks yummy and delicious. I am pretty sure that most of mylotters including me would like to visit Austalia , just to have the cake. Your description has got mind imagining of the cake in all dimensions. I cannot get a cake at this time of the day here. I am not sure if I had cakes with dried apricots but then that should be tasty .Do you add any other berries other than cranberries? Well, you should publish the recipe somewhere or make a video and share it in youtube. There would be people interested and do not think there would be shortage of people especially mylotters. I haven't tried other berries but I might try dried apples one day. I think they would taste good in it.
