Egg-stroidinary eggs!

Between inflation and bird flu, eggs are scarce and expensive. We found a twelve pack at Walmart for around $4 which isn't so bad. It got me to thinking about substitutes. If sugar is an issue, we can use artificial sweeteners (well, I don't, but they can be an option.) If potatoes are scarce, pasta or rice can be used. Canned evaporated milk can be substituted in cooking for whole milk in some recipes. Frozen or canned fruits and veggies can be switched for fresh when necessary. But I can't think of a good substitute for eggs. Do you know of anything?

I need to start freezing some eggs this spring or summer to be ready for this outbreak the next time it comes around. Seems like we have it every so often now.

I have an idea there is something that you can replace one egg with if the recipe calls for more than one. I can't remember what it is. You could buy dry egg powder during the war I think.

I have never seen it but I think it is in powder form. Eggs replacer or something like that. I might check out Amazon later.

Mayonnaise is a good substitute for eggs because it has eggs in it. But that only works for baking. If you’re looking to cook, and not bake, I’m not sure.

You're right, meat here is awfully expensive. I'm thankful we have venison in the freezer.

Someone already said flaxseeds and water . . . I haven't tried it as cooking substitute. But I have boiled flaxseeds in water for a cosmetic concoction - the water left does become like raw egg white !

You can replace egg with buttermilk in baking cakes. Some of my pure vegetarian friends try that and it comes out very good. If you are looking for a good protein source, you can replace it with lentils like moong. But definitely it will not taste the same.

That's a great question! I've been looking into egg substitutes too. Flax eggs (made from ground flaxseed and water) are a popular option for baking. For cooking, mashed tofu can be a good substitute. Have you tried any of these?
