Cooking is all about Mathematics

I messed up with the dosa consistency by adding more black gram dal by mistake. They turned out dry and I had to dunk them in tea in order to moisturize them. Cooking is all about mathematics. You have to count everything - be it weight, be it number of spoons, number of eggs, the works. When making cakes if you do not add the right proportion the cake will turn dry Even the size of the eggs matters. Where have you goofed?

I have been cooking all my life, from the age of eight. And I have perfected the estimation. But when it comes to certain dishes like cakes and dosa, I will take the correct measure.

@allknowing I was thinking of you this morning when I made a batch of hummus. I don't add oil- I find hummus is fine without oil. I used a can of garbanzo beans and was careful to add its liquid slowly so that I did not get a soup instead of thick hummus.

The adage - “Cooking is an art, baking is a science” is correct. To bake cakes you have to get the measurements right, but in cooking you can be creative and make adjustments to taste. I don’t bake often, but I do a lot of cooking. I tend to follow tried and tested recipes, so my disasters are far in the past.

My mother used to measure with her hands. A pinch of this and a handful of that. She was a great cook.

I have put too much moisture in a quick bread- too much pumpkin for instance, and the quick bread will not bake with crumbs but will be soggy.

It is not without reason that expert cooks recommend fixed portions of various ingredients. Even the size of eggs matter when baking cakes

If it is a new recipe l would have to be careful with measurements, but with my regular cooking and baking it is all in my head.
