Sunny Side Up Eggs

Also known as the only sun I get to see these days.
With bacon.
I had to finish the bacon I had left, and gladly did so.
Maybe not the prettiest dish you've ever seen, but it was tasty and my belly is merry.
I would like to buy some ground meat to make "recipes" I've seen in those short videos, such as tacos and burritos. Sadly we don't have 95% lean ground beef or whatever, so I'm torn between fattier beef or poultry. What would you choose? And what cheese goes best with either meat?

Since I eat a boiled egg every evening I have not eaten a sunny side up fried egg for some time.

@somewitch They say par boiled egg is healthier and tasty too. But one needs to have an egg cup to eat it as one cannot shell it.

@allknowing I got those cups but I boil a little more than par boiled so I can still - very carefully - remove the shell and cut it in half on a plate. Par boiled is also better because you don’t really have to peel the shell off.

@allknowing Boiled is quick and easy but also pretty tasty, I have that from time to time. Soft boiled though, so the yolk is still liquid. Then a little of salt and pepper.

Just buy the leanest ground beef you can find and, once you fry it (brown it), carefully drain off the liquids, just not down the sink drain. I drain liquids from frying ground beef/ground pork into a thick glass jar. (Thick glass so it doesn't shatter from the hot grease.) I keep the glass jar on the back of the stove until it's full, then put the lid on the jar and throw it in the trash.
There are a lot of delicious foods you can make with pre-browned ground meats.
Cheddar is a good cheese to start off with. It melts easily and is delicious.

@somewitch She likes cauliflower mashed up like potatoes. 
I've never tried eating cheese with honey... Maybe I should try that and see what I think.

@DaddyEvil Oh I see, we do that with oil but beef fat must be even worse for the pipes. A glass jar sounds like a good idea, even if I'd rather get away with some paper towels. I hope the beef I got is lean enough. And yes, I got cheddar!
Processed cheddar, actually. The real thing was too huge. And got other cheeses too.

@DaddyEvil Never heard of fatbergs but could imagine something like that could happen.
You both love cheese, me too! Especially with some jam or honey, the fancy way perhaps. But even on their own, cheeses are always appreciated. Pretty should have some with cauliflower.

I like the white of my eggs to be fully cooked so I always flip them.
You can use regular ground beef and just drain the grease away when it is cooked. I prefer cheddar cheese or I buy a taco blend which has seasoning added

@wolfgirl569 Thanks for the suggestions! I found lean beef but it doesn't come with percentages, I will drain the grease if there's any.
I got cheddar too, or some cheese blend with cheddar, prolly closer to American cheese.

I like both American cheese and cheddar cheese with ground beef, It depends on what I have at home or can buy,

@RasmaSandra I ended up buying processed cheddar, as well as provolone and mozzarella but the latter might just go on pizza or something similar.

@JudyEv Definitely! I didn't get any bacon today so hopefully I don't crave it next week.
Just trying to not eat too much saturated fat.

80 or 85% lean is really lean enough. It has flavor and is not too greasy. I would go with 80% ground, also known as ground chuck. My husband would say cheddar cheese, the sharper the better. I would say Monterey Jack or Pepper Jack in your southwestern inspired meals.

@GardenGerty We don't have percentages here so I don't know what I got, but there's a label that should tell me more. I think above 90% would indeed be very dry but as I'm adding cheese which is fatty, I wanted to save on beef fat. We'll see. Thanks for the suggestions, I got some sort of cheddar eventually. I've never heard of the two cheeses you mentioned but I got provolone which I suppose is vaguely alike. I like semi-hard cheese best after all.

@somewitch try it! raw? wow, that's maybe a delicacy but not sure what my stomach will say about that
after 2days, i got used it; it's roasted beef but still, makes you really full
i agree, pork is much better for sausages

@grenery8 Cool, I'll try gouda and chicken (or turkey even) next time! I sometimes have raw beef sausages, like they're soft and safe to be eaten raw. I guess it doesn't get any weirder than that but they taste good. I wouldn't like cooked beef sausages as much, pork only please.
