Scrambled Eggs With Avocado

And carrots.
I had this last week but been too busy to share until now.
It was @nela13 that recommended this to me in one of my discussions about eggs.
And @celticeagle gave me tips how to pick the right avocado when shopping.
After all, the main reason I never bought avocado was that I didn't know how to choose one.
Long story short, I had half with scrambled eggs for lunch and the other half for dinner with noodles.
And I fell in love with it!
But I didn't get any for the upcoming week because it wasn't on sale.
Well, I also didn't want to destroy my new love relationship by overdoing.
I got a kilo (2.2 lbs) of carrots though. That'll be fun.
I'm not brave enough to turn them into vegan bacon but I had them mashed with cream cheese and got my approval. I plan to make french fries out of them as well as baking some sweet goods.
We'll see if it'll happen.

@somewitch I think your food looks fine. I suppose if you had to have Martha Stewart appeal you could just lay slices of avocado on the side of the scrambled eggs.

@allknowing It can be improved by slicing the avocado properly, but I couldn't because it was quite ripe as well as my first time. I think even mashing the avocado or even making some guacamole to pour onto the eggs would have made it better. It was pretty good nevertheless.

@somewitch No, I don't. Avocado always tasted greasy when someone talked me into eating it and I really don't like greasy. Not even fat tastes that greasy to me.

@DaddyEvil I thought so, dots of dislike.
It does taste fatty to me but in a good way, not greasy. Well, I don’t think I mind greasy actually.

@somewitch Carrots mashed with cream cheese??? That is sure different. Kind of like carrot cake?

Carrots are somehow like potatoes except they got their own peculiar taste. Sometimes they taste soapy and obviously, not nice. But when I have them mashed with cream cheese I can barely taste the carrot so that's good.

@sallypup More like a puree, only using fat-free cream cheese instead of butter to save some calories. And adding spices such as garlic powder. I’m not sure I’ll make a cake, I was thinking of muffins. Or I could try a microwavable mugcake but I don’t know if the mugs I have at home are suitable, they got no symbol that tells so.

Vegan bacon is an abominations. Either eat bacon or don't. Don't try to make bacon out of something that isn't bacon.

It sounds like it would be good. You can make vegan bacon out of banana peels and coconut animo acid. I haven't tried it yet, but I have both I could anytime. Except now I have regular bacon.

@snowy22315 Banana peels, that's interesting! I'd throw them away otherwise. I didn't buy bananas this week either but I'll keep it in mind next time. I won't be able to get coconut amino though, I'll have to replace it with something else.
Yeah, regular bacon is okay in small quantities I guess.

@pahak627 Just eggs, carrots and avocado.
I don't remember the spices I used, salt and pepper for sure. Then I might have added turmeric, garlic and powders like that but I can't recall.

I like my avocado on toast with a sunny-side-up egg on top—yolk slightly runny for that perfect mix! Your avocado scramble sounds delicious too! Maybe I can give yours a try—after all, they're not too different since both have eggs! Haha.

@somewitch I toast some bread until golden brown, then mash fresh avocado on top. Sometimes, I add a pinch of pepper for extra flavor. I usually fry my egg in a pan, but sometimes I poach it instead. Then, I place it over my avocado toast and enjoy!

@pitsipeahie Sunny side-up eggs taste better though, I love a runny yolk! Do you cook the egg on the toast on the pan or do you pour the egg onto the toast later?

@porwest It's almost like having eggs with cream cheese, avocado is so soft and creamy. Well, I've never had scrambled eggs with cream cheese either but still.

@Laurakemunto Oh I see, I never had sugarcane. Is it slimy? I guess it's the texture of the avocado the thing you don't like, tastewise it's pretty bland.

@somewitch omelette is good choice. i have 2eggs left so i will make it too or maybe sunny side-up eggs, my favourite
i agree; carrots deserve some more creativity although, i often like them boiled.

@grenery8 Thanks! I’m having an omelette tonight for a change. Ham and cheese, as I got no avocado and I’m keeping the carrots for more complex stuff hopefully.

I cut down on a lot of junk I got to appreciate fruits even, I didn't know it was possible.
