A Waste of Money

Vegetables are supposed to last longer when stored in the fridge, right?, well not exactly. I bought a fresh, crisp looking bunch of pakchoi over the weekend planning to prepare a special meal early this week. I stored it in the fridge and imagine my dismay this morning when l took it out. The leaves were soggy and limp and dark - only the tough stems were in good shape. Maybe l should have left it on the countertop then l would have noticed when it started to wilt. Do you have problems with vegetables stored in the fridge? I never have a problem with carrots or cucumber. Maybe there is a way to make some veggies last longer. Picture shows how the pakchoi looked when l bought it last weekend.

I think maybe they would be better off not stored in the plastic bags.

Sometimes Pretty will buy something that gets hidden in the fridge until I'm checking to see what we have and I find whatever she bought still in the plastic bag but looking like it was in the fridge for months. That always grosses me out. She often buys a head of lettuce, eats a few leaves and the rest of it goes to waste. I won't eat lettuce. I love bok choy! When Pretty cooks it with beef, she only wants the leaves and throws away the stems. I've rescued the stems out of the trash, washed them off and chopped them up for another round of beef and bok choy. I don't know why she throws the stems away.

@Kandae11 I've suggested she just buy a bag of cut lettuce since she won't eat very much of a head of lettuce but she tells me it's too expensive to buy it that way. I look at the heads of lettuce I throw away and wonder about her sanity at times.

I love the stems, they are so crisp and tasty. I believe also that the stems have most of the healthy benefits..l usually buy a very small portion of lettuce so that it won't waste.

Not too much, but lettuce products seem to decay fairly quickly unfortunately.

I used to have problems with corriander leaves but I now add some sugar in the water where the stems are dipped and they remain fresh for days

Not all vegetables can last long in the refrigerator, like spinach, it must be cooked as soon as possible.

I think there are ways we have to store each vegetable - not all the same way. Carrots do last for a long time, but I have heard uncut cucumbers are better left on the counter (I don't do that . . . but if I put them in the fridge, it has to not be in a bag or container or it will get slimy). Leafy ones like this I think are supposed to be in high humidity - but usually I cook it up right away before it gets wilty and yellowed.

My uncut cucumbers are left on the counter. I usually buy my fresh vegetables on the weekend a d last week l decided to try pakchoi instead of the usual calaloo a leafy greens which usually lasts at least 3 days in the fridge. I was wrong about the pakchoi , so in future l will use it immediately or the next day.

I buy them fresh from the market every weekend -- hence the problem with storage.

Better place them in a plastic box before storing them in the fridge to avoid spoiling them. We place the veggies inside a plastic box before storing them only for the green ,leafy vegetables and tomatoes.

Is the plastic a good idea? - I'll try it anyway.

Lettuce can be revived by soaking the leaves in iced water. Maybe that would work with pakchoi but perhaps not if the leaves have started to darken.

I haven’t really had vegetables go bad in the fridge since I usually cook them within a few days. But for leafy greens like bok choy, you can try wrapping them in a paper towel before storing them in a container or a perforated plastic bag. It helps absorb excess moisture and keeps them fresh longer!

That sounds like a good tip, l will definitely try it. You see l buy my vegetables at the market every weekend - - that's when they come in fresh from the farms. So, what l buy must last me through the week.
