Do you like mushrooms?

Do you pick wild mushrooms in your country? Are you confident that you know the safe ones? We have lots growing near where I live in the fields and woodlands, but I don't dare try them all. I do eat the simple to recognise field mushrooms. Do you have a good recipe using mushrooms?

I love mushrooms, but wouldn't dare pick any unless I had a very good reference book to hand. The only ones I've seen growing near my home look very like the very poisonous "avenging angel" variety (or it's called something like that anyway - spindly tall stalk, white parasol-like cap perched on top) so I wouldn't even touch those! Mushrooms are great though, and my fave way to cook them is to melt a good knob of butter in a saucepan (sometimes adding chopped spring onions at this point), chuck the mushrooms in (halved if they're quite big), coat them in the butter, add salt & pepper and pop the lid on. When they've sweated out some of their juices, I give them a bit of a stir and add 1-2 teaspoons of Dijon mustard to give them a bit of richness and a kick, then pop the lid on and sweat them a bit more, serving them on toast (with some heinz barbecue beans too!). Yum yum yum! The simpler the better with mushies I always think.

Hope you enjoy it - I discovered the combo when I found I didn't have quite enough mushrooms to cover the toast, but did have a little can of BBQ beans in the cupboard. It was culinary serendipity!

It's one of my favourite food. :-) I don't dare to pick wild mushrooms and run the risk of food poisoning... so i usually play safe and by them off the shelves (dried ones) and recently, I've tried the fresh ones as well (abundant in the UK). Have you tried chicken legs and mushroom stew??? it's delicious... a chinese dish. I am not sure of the recipe but I am sure there is a recipe in the internet... why chicken legs? it actually tastes quite good... it needs to be soaked to soften it and cleaned throughoutly. marinated and then cook with the mushrooms... i'll try to find the recipe and post it either here or somewhere...

Found this in the internet... one of Amy Beh's recipe on how to prepare chicken feet: CHOP off nails of chicken feet and wash well. Blanche in boiling water for 1 minute. Drain well. Chop into 2 sections and brush with dark soya sauce. Deep fry until golden brown. Soak in water until it is puffy.

I pick mushrooms when I am certain that I have the identification right, but there are many that can be mistaken for inedible or occasionally dangerous species, so I often err on the side of caution and leave things alone unless I am completely confident in my identification.

I love mushroom. I enjoy them in a lot of food combinations. I would love to pick them but I would need to learn which ones were poisioness and which ones were safe to eat.
