I need Healthy Recipes

I publish a bi-monthly newsletter for a women's group at church. I have for 4 years incuded a recipe and the ladies love them but I've run out of ideas.
As many of the ladies are elderly or watching their health could you please please please share your recipes with me to use in the newsletter?

We are trying to eat more healthy meals and when I am in need of new recipes I search the internet. I take the ones that look good and then adapt it to my familys tastes. I would say to find a few and test them at home then put them in your newsletter. I recently found a great low fat recipe for a cream sauce, it is diferent for me because I make everything from scatch but but it is easay, low fat and good. I can fat free cream of mushroom soup, 1 can milk or water)wichever you prefer, 1 packet lipton onion soup mix, 1 tsp or 1 cube beef bulion, simer on med heat till onions are soft. Works great on just about anything you put gravy one ! Good luck in your search !

oh this sounds good I know a lot of the older people like lots of gravey and stuff (also helps them with swallowing problems that come with age) but graveies are not good for them.

I think you will like it and even if you use regular cream of mushroom it is way less fat than real gravy. I think you are doing a good thing and I will send you some more recipes in a while.

Oh thank you, I think we'll try this tomorrow night. I know last night we had chicken and rice and this would have been great on that - the lady bless her heart did comment even with the juice from the chicken (broth) the rice was "a little dry". Greatly appreciate anything you can share. The ladies love the newsletter and I love doing it although is sometimes a struggle.

What kind of recipes are you looking for. I have many discussions started with various recipes and they are all homemade and healthy. No MSG or Preservatives. If you tell me what kind you are looking for maybe I can be os some asssistance.

Any kind are fine, I try to mix them up from issue to issue, maybe dessert type one time and meal or main dish the next. Mainly American women but we have many many retired missionaries who have lived around the world over the years. Such as the couple I'm helping for the next few weeks they were in Africa for 25 years.

have you tried going to the kraft website?? i was always looking for different recipies and then i decided to visit www.kraftfoods.com (i think thats the url) and you can sign up for a free newsletter where they send recipies to your email every month and you can also sign up for the Kraft Magazine which is totally free and they have a lot of good and healthy recipies. all of course use craft products of course, but you can always exchange those out sometimes. but they also have a section on the website where they are healthy recipies and for some of their recipies they have the 'healthy exchanges' where it tells you how you can make the recipie even healthier.

Have you thought about looking into Weight Watchers recipes? Healthy stuff there!
I am sure you can find WW recipes online.
I think this is wonderful that you do that.

You want recipes that we have , not just the ones that are online? I'm sure many people could copy and paste a recipe and throw it on here. Well if thy have 500 posts or more. I will see what I can dig up for you. I do have a blender drink recipes that i make and it is healthy and very yummy.
Berry banana smoothie
1 cup strawberries
1 cup blackberries
1 cup blueberies
1 banana
1 cup vanilla yogurt
1 cup special k cereal
1/8 of a cup nuts any kind
2 cups milk (any kind that you like, 2 percent, whole or skim)
Put it all in a blender close the lid and blend on high till everything is liquid. About two mintues. Pour in a tall glass and enjoy. This is tastey and very healthy and it has all the ingredints needed for a comlete meal.

Yea, I realized when I put this discussion up that many can't just copy and paste a recipe. I really truely appreciate you taking the time to type this in. Using this one in tonights issue - thank you so very much this is great.
For others though I do still need recipes for future.

One super simple recipe that I use pretty frequently is:
Take several large leaves of greens (collards, chard, mustard, etc.). Roll up the leaves and cut in very small pieces, so you get thin ribbons. Chop 1-2 pieces of bacon or turkey bacon and fry in a non stick pan until crispy. Add the greens until color changes to bright green. Eat!
I know bacon isn't exactly a "health food" but you use so little it's worth it because of the amount of flavor you impart on the greens. I hardly ever eat greens any other way and greens have a lot of fiber (but chopped small so easily chewed and swallowed), vitamins, and folic acid. And something like chard has 100% of vitamin K, A, and C, and 11% of you daily calicum (per cup). AND there are so few ingredients, you almost always can make it.

This sounds great and easy too. I know one of the things they couple I care for can have is a special "low sodium, low fat bacon" I could do this and they would get vegetable they need plus a serving of protien (both diabetics). Thank you so much and I will check out this site shortly.

Spicy Peach Chicken
Original recipe yield:
6 servings
PREP TIME 15 Min
COOK TIME 25 Min
READY IN 40 Min
INGREDIENTS
* 1/3 cup peach preserves
* 1/4 cup honey
* 1 tablespoon spicy brown mustard
* hot pepper sauce to taste
* 1 (2 pound) whole chicken, cut into pieces, skin removed
* 2 tablespoons Creole seasoning
DIRECTIONS
1. Preheat the oven broiler.
2. In a small bowl, mix peach preserves, honey, spicy brown mustard, and hot pepper sauce.
3. Arrange chicken pieces on a medium baking sheet. Season with Creole seasoning. Brush with the peach preserves mixture, reserving some of the mixture for basting.
4. Turning occasionally and basting often with reserved peach reserves mixture, broil 25 minutes in the preheated oven, until chicken is no longer pink and juices run clear.

Wow, I checked out this site and there are some great recipes there - I just ate and they still sound great. Saw a couple I'm going to keep for the couple's dinners and several I'll use in the newsletter, thank you for the link.

well are you looking for whole meal ideas or just specific things? I have lots and lots of things that I love to cook how healthy they are Im not totally sure. I tend to cook on a whim what sounds good is what gets made. I make my own creations...haha I also have a lot of crock pot recipes that come out GREAT! I just made one last week, that I was able to get 2 meals out of...everyone loved it too.

I've never heard this before but will certainly have to try it. I'm not obese but do carry a few extra pounds maybe this recipe could help me before it gets out of control.

It is a known fact that quite few people in this world are suffring due to obesity.There may be more than one reason why people are obese.I am diclosing a recipie which helps in reducing obesity.Moring before having breafst or anny bevrage it is advised to consume this recipie.Heat a glass of water not very hot.Pour dops of lemon juice.Add honet about one or two spoons.You may consume the above recipe for two to three months or continue it you wish to stop.The recepie i have mentioned is aslo suppsed to increse the calcium content.

Here is my Low Fat Chili Recipe, although it is not as healthy as some of the other things on here, it is very low in fat and tastes wonderful.
Texas Low Fat Chili Recipe
1 pound ground turkey
1 onion, shopped or 2 tbl spoons instant minced onion
1/2 teaspoon of garlic powder
1 to 1-1/2 tsp chili powder
2-1/1 tsp ground cumin
1 (28 oz) can crushed tomatoes
1 (6 oz) can tomato paste
(you can add beans at this point, although I omit them)
** 1 (30 oz can chili beans
Brown turkey in onion over medium-high heat, stirring to break up meat, until lightly browned, 5 to 10 minutes.
Stir in all remaining ingredients. Heat to boiling. Reduce heat to medium-low and simmer, uncovered for 10 to 15 minutes.

I'll give the follwing recipe hoping you will appreciate it.It's like antipasto but you can eat it now during this season and it's very healthy;it's for 2-3 persons.
You need of 10 basil leaves ,15 little tomatos,salt,oregano,oliv oil,6 slices of bread and a little quantity of fresh onion,but it's optional.
Wash your basil leaves and them into small pieces,you have to do the same thing with the tomatos and the onion.Unite these 3 thing in a container and add to them salt,oregan and olive oil.
Bake the slices of bread and after you have exit the slices,set them in a plate and put on them the mixture.I suggest you to choose large bread slices so it's more easy to eat them and to put on them the mixture.You can change this recipe adding to the mixture also mozzarella but I prefer the first way beacuse it is a more light recipe.
If you have seen it's very esy to prepare it and it's too quickly.

I would say that Tabouli salad is healthy it is one of our favorite summertime treats. we like it with lots of parsley in it!
I lost my usual recipe with a computer crash :(
but there are many online. You can add a lot of variations to it
some add ins that we like
cucumber chopped (seeds removed)
red onions or scallions
feta cheese
black olives (greek olives when I can find them)
lots of parsley
Tomatoes (again without the seeds, I am an anti goo person, lol)
some people will soak their bulgar in boiled water, others let it soak in cold. I do not have a preference, I like it both ways.
My dressing consists of cider vinegar, lemon juice, sugar, garlic, and olive oil.

Excellent and Healthy Cornbread

INGREDIENTS
* 1 cup unbleached flour
* 1 cup cornmeal
* 1/4 cup white sugar
* 1 teaspoon baking soda
* 3/4 teaspoon salt
* 1 cup plain nonfat yogurt
* 2 eggs, beaten
DIRECTIONS
1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease an 8x8 inch baking pan.
2. In a large bowl, mix flour, cornmeal, sugar, soda and salt. Stir in yogurt and eggs. Do not over mix, stir only until well blended. Pour batter into prepared pan.
3. Bake in preheated oven for 20 to 25 minutes, or until center of the bread springs back when gently pressed.

Orzo with cherry tomatoes, capers and lemon
Ingredients
2 teaspoons extra-virgin olive oil
2 cups cherry tomatoes, halved
1 garlic clove, minced
1 cup orzo
2 cups chicken stock, vegetable stock or broth
2 teaspoons chopped fresh thyme
2 teaspoons capers, drained and finely chopped
1 tablespoon pine nuts, finely chopped
1 tablespoon grated Parmesan cheese
1 tablespoon grated lemon zest
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Directions
In a frying pan, heat the olive oil over medium heat. Add the tomatoes and garlic and cook until the tomatoes are tender, about 3 minutes. Set aside. In a large saucepan, combine the orzo and chicken stock over medium-high heat. Bring to a boil, then reduce the heat to low, cover and simmer until the pasta is al dente (tender), about 7 minutes. Remove from the heat and let stand, covered, until almost all of the liquid is absorbed, about 3 minutes. Add the thyme, capers, pine nuts, cheese, lemon zest, salt and pepper and toss gently to mix. Add the tomato mixture and toss until all the ingredients are evenly distributed. Spoon the pasta into warmed individual bowls and serve immediately.

Here's something healthy,easy to cook and cheap!
Tuna ala Pobre
pasta (spaghetti noodles are my favorite!)
tuna in oil (I love the hot and spicy variety!)
parmesan cheese
walnut (cashew can be a substitute, cheaper too!)
finely chopped onion leaves
crushed garlic (garlic chips in bottle if you are in a rush)
sliced mushroom
1. cook pasta as directed
2. heat tuna oil in a pan
3. add some fresh crushed garlic and wait till it's a little brown.
4. add the tuna and a little water. let boil.
5. add sliced mushroom
6. add the pasta
6. best served if topped with chopped green onions, walnut,crushed garlic and parmesan cheese.
