Usually parmiggiano reggiano and romano cheeses are the classics for pasta. For lasagna and manicotti, it's ricotta and mozzarella.

I use parmesan, cheddar, mozzerella the most. But, I am sure other cheese, especially hard ones whould be just as good.

I love using Parmesan cheese on top of my pasta but I like mixing shredded cheddar or monterey jack in the sauce.

Parmesean and Reggiano are good cheeses for sprinkling on top of completed pasta dishes. I like how Parmesean is dry enough to be shaved into pretty curly-cues. For creating sauces, I like fresh mozzerella or ricotta- depending on what you're making. Both are somewhat bland, but they melt and mix easily into a sauce- thereby avoiding those swimming clumps of melted cheese.

Parmesan or a mix of romano and parmesan. You can buy it grated in any grocery store. If you prefer you can buy chunks at a specialty store (gormet, Italian deli, sometimes at the deli counter at the super market) and grate it fresh yourself. That is the best! Enjoy! b
