Banana and Sultana Cake

A very easy low fat recipe and it tastes delicous.
1lb peeled ripe bananas (5 large)
2 eggs
6oz brown sugar
4oz sultanas
8oz self raising flour
Mash the bananas; add eggs, sugar and sultanas and mix well
Add the flour alittle at a time mixing well.
Place in a 2lb lined/greased loaf tin or cake tin and bake in the oven at 180'c/350'f for 1hr 15 minutes.
Store in an air tight container for 24 hours before serving, then enjoy

Wow, bananas is my favorite, I don't know that it can be used to do cake, in China, families don't accustomed to the cake,when we celebrate a birthday when supermarket to buy a cake, and then went to back home to celebrate, You always eat your own cake?I envy you...^_^

Nice recipe. I have another recipe which uses bananas. It's called banana fritters. Cut peeled bananas into half. Mix a cup of flour with a little salt, half a spoon of butter and water. Mix it into a paste. Cover the bananas with the paste and dip fry. When they turn into golden color, take it out and serve while still hot. Suitable to be eaten with plain hot tea.

I love bananas and banana cakes. Thank you for sharing your recipe which I will eagerly try one of these days. I'm sure it will be really yummy!
