Potato and Caramalised Onion Tortilla

Cheap, Easy, and Delicious....
Peel and cube one large potato and fry in olive oil until soft and golden. Caramelise half a medium brown onion. Toss onion and potato together in a bowl with two beaten eggs and season. Heat oil in a tortilla pan (about 10cm diameter) and add mixture.Cook over low heat until golden and puffed. Invert onto a plate and slide back opnto the pan. Cook until hust set.

Apparently it is 10cm type of frying pan. You should be able to get one in a Homewear shop.
But I honestly any 10cm (diameter) pan would do.

wow. That is unbelievably easy and sounds really good too. The fact that I love potatoes makes it even more appealing..Gonna try it this evening! Thanks for sharing.

I have tried this and i can confirm it is absolutely delicious.
Adding a little bit of chilli powder adds a nice kick to it as well.
