I'm into gluten-free diet for almost 2 years now.I'll say it's hard because most breads, cereals, cakes and biscuits have wheat in them. Some soups ,dressings, and even cosmetics doesn't escape from gluten. You have to read the labels carefully when shopping for food items. You can use rice flour, cassava flour and chickpea flour when baking, but it will not have that good results. When shopping for cereals I will always go for corn cereals or rice pops.Oat biscuits are also my favorite food items.
I don't have celiac disease but I'm a self-diagnosed glucose intolerant.I have read an article that wheat products was not used as food until the world war 2 ,when there was scarcity of food.Gluten can have bad effects on our body ,which I started to believe because I experience some symptoms like bloating, brain fog, skin itchiness, dandruff and acne in the chin area as was mentioned in the article.I did trial and error and my symptoms are lessen when I got rid of gluten products and worsen when I consumed one.On top of that,I also lost some weight as gluten-rich food are also high in sugars and calories, which was cut drastically as a result of cutting gluten.
