Homemade Soups from Leftovers

Making homemade soups is a great way to use leftover meats and vegetables. If you have leftover vegetables or meat after a meal, put it in a container in the freezer. Of course, label each container of meat so you can put chicken with chicken and so on.
At the end of the month you should have enough leftovers in the freezer to make a couple of pots of soup.
Simply start your broth by either using store bought stock or using bullion cubes. Chop up an onion and add this to the broth. Add your frozen vegetables and meat to the broth. Simmer for 30 minutes. Salt and pepper to taste, add any herbs or spices to taste, such as oregano, garlic, bay leaf. Add cooked rice or noodles and you have a great soup.

I have made hamburg soup, beef stew, vegetable beef soup, chicken vegetable, turkey vegetable, pea, bean and tomato vegetable.

In my neighborhood there are fruit and vegetable stands where they have a lot of "unsaleable" goods, you know bruised veggies and the like...
I supply my soup pot with these goodies that were simply going to be thrown away.
Most of the time, these are given to me at very low cost or free for the asking...
This allows me to keep my soup pot going all winter with very little expense! :)

I love making homemade soup. It is a great way to use my leftovers, not to mention the time I get to spend in the kitchen doing something I love.

I do this a lot .. and I use up all the 'not quite so nice' vegetables too .. in fact I often cook a little extra to what I need so I have plenty of 'left overs' to make a soup of even a stew with my 'freezer bits' ...
And the soup or stew freezes well too ... and all from the little bits you'd probably have thrown away ...

I just did this at lunch today! I was really hungry for some vegetable soup, so I went home at lunch, threw some frozen veggies, potatoes and some frozen leftover beef in the crockpot... added a few spices and herbs and turned it on high for 4 hours. When I get home from work, my kitchen should be smelling very good ;)
I wish I would have thought of it this morning so it could have cooked on low instead of high, but it will still taste good.

Good idea! I usually just throw our leftovers away and this way I can save them and re-use them. I am embarrased to say that I've never made homeade soup before.

I have broadened my ability to make soup. Trial and error. My husband makes a great tomato soup with meatballs. I never made homemade tomato until I met him. It is so good.

I usually do that myself. But, I also use it with pasta, instead of soup. Make a quick gravy, and that's good too. Did you ever try to fry the veggies left over in batter? Or grind the meat or chicken leftovers and make fried patties? It works well too.

I hate to cook and I hate leftovers. For that reason my roommate always makes soups from leftovers and what she can do with "varina magica" (literally translated means "magic wand" but is actually a hand held liquifier. You can't imagine the ingredients and seasonings she puts into them thar soups. She usually makes a 4 qt pressure cooker full and freezers what we don't eat the first time around. Usually lasts a couple of months at least or until there are enough new leftovers that need to be processed.

We make soup a lot, my method is slightly different to yours though in as much as we saute the onion n a drop of oil first before adding the other ingredients and the stock, I adore soup, its such a great filler and on the whole is a very healthly meal (except we often cook dumplings in ours which sort of negates much of the healthyness)

This is a great idea thanks for sharing the information with us. I keep some leftovers for casseroles, but they are usually the next day, this is a good idea to keep foods from getting dull and in a rut. Thanks for sharing!

I love to have homemade soups.My mother often prepares it for me.She uses the main portion of the vegetables in the dish and the rest over are utilized in this manner preparing mixed vegetable soup.I am also fond of chicken soup and tomato soups..
They are very healthier and nutritious also..

i think we can do that but my family actually do'nt like left over even i keep on changing dishes then they do'nt like.i think it would be not that much nutrient and healthy as we made fresh one,any way but it's nice i can try it for me.
