What are some simple vegetarian meals for one person

Hi,
I am a single man/father with CFS and dont have a lot of energy to make meals.
Would really appriciate some input.
I mostly eat rice with black beans or rice with scambled eggs.
Starting to cook some vegies in water too. Have been putting butter on them,
and would like to know of somethimng better to put on them.
Usually have some bananas and apples here too.
Also fix popcorn for myself, for munchies, but not sure how good that is.
I have cut down on the butter and salt I put on it though.
My seven year old son will benifit from this too.

Try to eat raw food to gain more energy. I am vegetarian but not vegan. I like my eggs cook, but I eat a lot of raw food.
Mixed greens with nuts, olive oil and lemon juice. Raw carrots with raisins. Raw radishes with sour cream. Raw califlower or braccli with mayo.
If you like rissotto, rice with mushrooms and carrots is good.

If you are not afraid of beans, sour cream and mayo won't give you more fat. Be carefull with beans. Eat green beans only if you worry about fat.
Moderation is the answer. The best diet is: DETM
Don't Eat To Much.

Yes, Im wanting to add more raw vegies , and have wondered about a dip, aomething to put on them.

My waist line gets scared about sour cream and mayo, if I go light on it will I be ok ?
I dont really know if it is something that would make me fat, but wonder about it.

I have a great vegetarian recipe for you. Ready in 20 minutes and delicious!
You need:
1 can of brown beens
150 grams of green pesto
250 grams of pasta
100 grams of sour cream
You need to do:
first cook the pasta, then put everything together and mix it up a bit. Keep it on the fire until it's warm. Done!
(sorry my writing skill at recipes is like 0, but I hope you get it)

I love beans and rice. I also like to saute a frozen vegetable mix ($1 at our grocery store) with some oil and soy sauce and garlic. I just throw this on top of brown rice.
I like to make simple stews with beans, lentils, split peas, or just assorted veggies and potatoes.

I,ve been trying to figure a way to use vegies with the rice, that is a big help !!!
I want to start doing a stew/soup thing, I use to make a seven bean soup that was great.
I feel like I am opening up to want to fix my self and my son some other meals.

Awww sorry to hear about the CFS - must make everything that bit harder.
I use The Single Vegan - it even tells you what to buy each week in order to make the meals. If you eat dairy and eggs it would be easy to add these to the recipes.

Plain rice is a very simple vegiterian dish with pease as a vegetable. Also you can try a boiled plower with only salt sprinkled on it.

plain rise is not very tastefull, is it?
you can make really delicious vegetarian meals. I'm a vegetarian myself and if you choose the ingredients well, it is healthier and it tastes better.

Have you tried Balsamic vinegar on veges...raw fresh veges with a drizzle of olive oil and a splash of balsamic is as close to heaven you can get! LOL
