nehenderson I have several cookbooks, but I also create my own recipes. I have cooked on a professional level many years and love to create my own but I still have several books I use often.

How can i keep my cookies chewy and soft for a longtime?

After baking the cookies after 1 hour they get so hard.. i don't know what to do to keep them chewy and soft. Do you have any better idea?

nehenderson Not only try cooking them a minute less time but your oven may be too hot. Try reducing the oven temperature by 5 degrees. Check them and take them out a little early an cool on the cookie sheets for a minute or two before placing them on a wire rack to cool....

nehenderson I make a nice southern fried chicken. Wash and cut up a fryer. dredge it in seasoned flour. Dip it in a buttermilk and egg mixture and roll it in the flour again. Slow fry it in a deep skillet in hot oil until a golden brown. About two inches of oil is best....

nehenderson My Dad loved to fish so I guess I got it from him. He taught me to bait a hook when I was very young. He said if you are big enough to fish you are big enough to bait your own hooks. I am legally blind and cannot drive so I have no way to go fishing now...

nehenderson It all depends on the food and if I had planned for leftovers to use in another recipe or not. Sometimes I prepare more we need just tom use in another dish and sometimes we just heat and eat.

nehenderson Yes it is perfectly safe to eat. It can be kept frozen for 6 months and still be very good. After that time it can become freezer burned and that will change the taste and texture of the meat.

nehenderson I wash chicken, pork and some beef under running tap water. I do not use salt because we have to limit salt for health reasons.

nehenderson I do add salt(in moderation), and pepper to most everything including cantalope and watermelon. I also like pepper on baked potatoes. I don't use much salt when I add sour cream and cheese because they have salt in them.

nehenderson One of my favorite things to cook is a mixture of okra, squash, green tomatoes, cucumbers, and onion. Pour beaten eggs over it and roll in seasoned corn meal and fry in a small amount of oil until lightly browned and soft.
