What do vegans eat??

I mostly only eat lean meats and pasta and veggies, but I have been thinking about becoming vegan or vegetarian. I am just afraid that I will run out of things to eat! Anyone have examples of what they eat besides the obvious??

My kitty wakes me up all the time at night and keeps me up by playing! If I shut my bedroom door she just scratches at it, thus keeping me up anyway! How can I get her to chill out at night??
